I modified an existing chocolate cake recipe to get this one, and I want to record it before I forget it. So!

1 stick butter
1-2/3 cups all purpose flour
3 eggs
5 ounces unsweetened chocolate
1-2/3 cups dark brown sugar
1 teaspoon baking soda
1 cup buttermilk
1/4 cup heavy whipping cream
1/2 tablespoon vanilla essence (which I neglected to add last night because Beth didn't have any)
1/2 teaspoon salt

I'm not bothering with instructions--use the creaming method you find in just about every recipe book in existence. Oh, wait, here's a semi-tricky bit: heat up 1/2 cup of buttermilk and 1/4 cup of whipping cream, then melt the chocolate in it, allow it to cool, and add the resulting mixture into the batter just after you're done beating the eggs in, and before you add the flour and the rest of the buttermilk.

Oven was at 375°F.

The cakes were pretty goddamn awesome--not too sweet, very rich, moist, extremely tender crumb.

Apropos of nothing: My bedhead this morning was the BEST EVER. I am not kidding. Pictures soon, but now, I have to get ready for law school.

I just discovered an awesome new-to-me chocolate frosting method, which is to basically make a ganache out of heated cream and chocolate, let it cool, and then whip it. Very bad for us, I'm sure.

Yes! My favorite ganache recipe uses the same method, and is basically a pound of bittersweet chocolate, a cup and a half of whipping cream and some sugar. SO GOOD.

I bought the cream and buttermilk today. Will be trying this recipe, probably Sunday. Because OMG we need more chocolate around this place.

Finally got round to this.

They are divine.

Even without the baking soda, because hey, I was too busy singing along to Dan Fogelberg to pay attention. I told Boy Scout to think of them as slightly puffy brownies.

Also--slightly less butter than called for worked OK (it was all I had) and 2 oz. of bittersweet chips because I lacked quite enough baking choc.

I never can follow any directions to the letter, you know. Sad but true.
